<Sensory Profile>
This is an espresso roast Ethiopian coffee. It has the characteristic floral and beautiful fruity notes of Ethiopian coffee. Even when mixed with milk, its distinct fruity flavor remains.
Cherchere is located in the Gedeb district of the Gedeo zone, 447 km from Addis Ababa, the capital of Ethiopia. The area where Cherchere is located is in the southernmost part of the Gedeo zone, and its high altitude, rich soil, and excellent terroir have made it recognized by buyers worldwide as an area that produces coffee.
Coffee cherries are harvested from small areas on each farm, often referred to as "garden coffee," which are essentially extensions of the farm's yard. At the small-scale farm level, pesticides are extremely expensive, and because of the high altitude, insect damage is minimal, so there is no need to use them at all. The fallen leaves and fruits of native trees other than coffee plants, as well as edible fruit trees, function as natural compost, maintaining rich soil nutrients and resulting in a bountiful harvest of coffee cherries.
Furthermore, with the recent rise in demand for specialty coffee, the prices that these small-scale farmers receive from processing plants such as washing stations have improved considerably, ensuring a better quality of life and creating a fertile ground for sustainable coffee production.
