<Sensory Profile>
It has a bright yet deep acidity, reminiscent of plum, dark cherry, and peach. The texture is soft and juicy.
As it cools, you can enjoy a refreshing aftertaste reminiscent of apple tea or barley tea.
【Kii Factory & Rung'eto Farmers Cooperative Society】
This coffee is processed at the Kii Factory, which belongs to the Rung'eto Farmers Cooperative Society in central Kenya. Kii is one of three wet mills managed by Rung'eto FCS in Kirinyaga and is Fairtrade certified. The cooperative was established after the dissolution of Ngiriama FCS and was formed by the merger of three factories: Kiangoi, Karimikui, and Kii. The chairman of the cooperative has implemented quality improvement initiatives at all Rung'eto FCS factories. For example, tiles have been installed in all washing channels and fermentation tanks. Furthermore, a system has been put in place to reuse water used in the processing process. Farmers belonging to the Rung'eto cooperative cultivate coffee at the foot of Mount Kenya, a region known for producing robust, complex, and flavorful coffee.
[Harvest and Post-Harvest Process]
Sorting
Before entering the production process, the cherries are manually sorted by farmers to separate unripe and overripe beans.
Pulping
The peel and pulp are removed using a 3-disc Agaarde pulping machine. The fruit is then graded in three stages based on density by the pulper.
Grades 1 and 2 are sent to the fermentation process separately, while Grade 3 is considered a lower grade.
Fermentation
The coffee undergoes dry fermentation for 18 to 36 hours in covered concrete tanks. The roof provides shade and helps control the temperature during fermentation.
Washing/Grading
After fermentation, the coffee is washed in a washing channel and sorted again by density. In some cases, it may also be soaked in clean water overnight.
Drying
The produce is sun-dried on African beds (elevated drying racks) for 12 to 20 days. The drying period varies depending on weather conditions.
During the day and night, cover the plants with plastic sheets to protect the beans. In this region, flowering typically occurs in February or March, followed by harvest time in October or December.
【Soil】
This soil, primarily known as Nitisol, is a fertile red soil formed from volcanic material. It is commonly found in highlands and on steep volcanic slopes and possesses superior chemical and physical properties compared to other tropical soils.
